Green Salad with Eggplant Croutons

INGREDIENTS

  • Sylvan Eggplant Dice
  • Olive oil
  • Lettuce
  • Pecans
  • Tangerines
  • Blue cheese
  • Salt and pepper
  • Lemon
  • Sliced red onions

DIRECTIONS

1.

Preheat vegetable oil to 350˚F.

2.

Fry the Sylvan eggplant dice.

3.

In a bowl, place lettuce, pecans and tangerine.

4.

Add red onions and blue cheese.

5.

Add the fried eggplant dice.

6.

Add olive oil, lemon, salt and pepper.

7.

Mix well and enjoy!
