Carrot Risotto
INGREDIENTS
- Porcini Mushrooms
- Arborio Rice
- Sylvan Carrot Dice
- Chopped onions
- White wine
- Olive oil
- Chicken broth
- Parmegiano Regiano
- Butter
- Salt and pepper

DIRECTIONS
1.
In a pot, sweat onions in olive oil.
2.
On another pot, place the porcini mushrooms in the boiling broth.
3.
Add Sylvan dice carrots to the onions pot.
4.
Add rice and sauté.
5.
Add the broth to this mixture and sauté.
6.
Add parmesan and butter.
7.
Season with salt and pepper.
