Eggplant Pizzas

INGREDIENTS

  • Sylvan breaded eggplant cutlets
  • Salt and pepper
  • Pomodoro sauce
  • Olive oil, to taste
  • Fresh basil leaves
  • Shredded mozzarella cheese
  • Pepperoni
  • Vegetable oil

DIRECTIONS

Preheat the oven to 400°F (205°C).

Heat 3 to 4 inches of vegetable oil in a pot over medium-high heat until it reaches 350˚F (180˚C), then drop the breaded eggplant cutlets and cook for 3 to 5 minutes, until they look browned and crispy. Also you may do this step on an oven at 400°F for 20 minutes or on an air fryer

Remove them from the oil using a wire mesh skimmer and transfer them to a paper towel or a baking rack to drain.

Add marinara sauce, sprinkle mozzarella and add pepperoni.

Put the eggplant cutlets in the oven for 3 to 4 minutes until the cheese melts. In case you own a wood oven you may use it or simply broil them for 5 to 7 minutes at 400°C.

Garnish with your herb of preference and allow to cool before serving.
